I have the 64,I weigh between 190-200.I've only had it out once but I think if you could fit the 56, you should get it.The 64 has lots of volume where you need it and I can assume so does the 56 so stability shouldn't be an issue.I found the 64 to be super stable but felt pretty big to throw around ...

Look at a Project X.Lots of up front volume that carries to the stern.Small steps, look at a wider, friendlier boat.Stick with it,a little learning curve but you will have a bombproof role.
