If the Prelude hasn't scared you off I would go for something more responsive than the Probe. The Viper would be my choice.

I put a few coats of Hellsman Urethane Spar varnish on mine when I got it last spring and it did not hold up well. This season I am using a marine grade urethane varnish. It may just be that I need to refinish them two or three times a year.

The only thing that I would suggest that hasn't been said already is learn to stay in the boat longer. When you get on the river stuff will screw with your roll. Being able to hang out for 3, 4, or more roll attempts will come in handy.
