I have used both Krylon and the two-part marine epoxies on boats. It is a push-me/pull-you choice. The Krylon is very easy to use, doesn't need any special skills, isn't especially toxic, looks good -- but it is just a coat of paint and isn't especially durable. If you're doing the Gat and the upper canyon on the Petite, there will be plenty of runs at ALF that you can do. The biggest difference is getting used to low volume rivers and running over rocks instead of around them.

Our club here in Ottawa owns a Spark and keeps it in an unheated shed over the winter. We usually get a couple of weeks -20C. To the best of my knowledge, the gunnels have never been loosened even though this would be prudent. So far, no cracks.
