Zephyr is light and fast, might even be a good ww boat for overnight trips up to several nights. Because of the hull material it’s helpful if you live near Esquif if it needs repair. I have seen Vertige outfitted with a traditional bench style canoe seat and thigh stripes etc.
If you are hitting branches and believe you need a smaller more manoeuvreable canoe you should also consider improving your moving water canoe skills by taking a course.

I love the Rival. It is friendly and fast. It also makes a great solo whitewater canoe tripping boat. I'd go with thigh straps or a bulkhead. You already have thigh straps and anchors so might be your best option. Before you cut down your saddle you should try out some other solo canoes to see what ...
