To avoid chipping the gel-coat, drill from the gel-coat side. Start with a small pilot hole. Hold the drill firmly, but press very gently. Control is the key, because if the drill catches, it will chip the gel-coat. If I am going to drill many holes, I'll reduce the drill bit's draft angle to near 9...

Frankly, I don't think you are going to find a 3.5M boat that is appropriate for your weight. My recommended boat for you is a full-cut Extrabat, Cudamax, Fanatic or similar design vintage. At your weight, any of those will still act like a low-volume stern contemporary design.

When I do a repair, the last "layer" I apply is Handi-Wrap over (and well past) the still-wet repair area. I use wide masking tape to stretch the film tight against the layup. I can then use a roller to work the area smooth and void-free.

In some of the latest slalom designs, the classic small cockpit has been replaced with a much larger hole. My slalom C1 cockpit is huge (for development purposes) and Casy Eichfeld got his Vajda skirt onto it.

I had a custom SnapDragon skirt made for my C1. They can make anything, as long as they have a cockpit template. (I sent them my own template.)
Of course, if you're ambitious, you can also make your own skirt.

Because of the soft hull material, you need an extra-large head like this. I can't say whether the size/length is correct though.

My preference is Cheek control without the pads. My C1's seat pivots up from the back for exit safety.

I think some people have a mistaken impression of a composite boat's longevity. Most of them not only absorb abuse better than Royalex, they are easier to fix. I've been happy with the Akona 3.5mm booties. Not the best for rock-hopping, but better than most flexible designs. They allow me to paddle comfortably with the tops of my feet flat on the hull.
