Interesting topic about the cuts. I always thought that the number reflected how much was cut off the hull and deck before joining them.
That's how Shaggy does it on their boats. A full boat has noting cut away, a 1 cm has 1 cm cut from the hull as well as the deck, and a 2 cm has 2 cm cut off the hull and deck.
