Trim Setting a Slalom C1

To All,
I have been slowly working my way through a complete restoration and rebuild of a Double Dutch Ultimo that my son will use for Slalom training and racing. I am nearly done with it and am at a crucial point that I need some ideas. The pedestal seat is all shaped up and ready to be installed into its final position. Two questions:
1. How should I set the trim?
2. What do I look for to make sure it is right before I glue it in?
I have the old markings and foam lines from the previous owner to guide me somewhat; however, they are just guides. One day I may spend some time writing out what it has taken to get this boat to this point.
