I just bought on ME and want to outfit it so it can be paddled as aggressively as possible/highest performance.

The boat is an ME. Is there much difference between putting the saddles really close (30" apart) or spacing them more (48")?

Is there a tradeoff of getting seats too close (less leverage to rotate boat and bonking your partner with your paddle) vs going farther apart and maybe making the boat wetter or hader to roll?

Yes - the stern paddler may hit the bow person

and

one may get tired of not of the other - not being able to reach the cooler !

    If your only using it for tandem, its a good idea to put them closer togeather, the ME a bit wet if you can't get you ends up. deck c2 are very close and you can bump into each other once in a while, when that happens, the two of you probably aren't in sink with each other,

    it will also turn easier,
    safe the drinking for after when you and your partner are fighting, you'll get over it quicker
