could i convert any kayak to a c1? Or do certain boats make easier c1's? I've found a few links with ideas on the outfitting so I think i'm good once i figure out which boat to get!

Good question; not all K hulls makes good conversion.
Generally, stability (width) is an issue so try to get a stable design, 26" width id almost much the wider available from most cies but the hull design also does a lot there, not just width.
Speed is another issue, with any boats but river runners especially.
When you spot a potential boat look at the museum collection on this site and see if anybody else tried that conversion before, or ask around.
If you have the $ for a new hull then check out the LL remix it is a great river runner and beginner friendly conversion. Fast, stable and rolls bery easy; among the preferred boats around these days but many other ones are good too.

In the upper left of your screen click on the drop down by "Search Boats" and select "Conversions" to give you an idea of what folks have converted, and how that particular boat worked for them.
Not all Kayaks are good boats to convert, as has been previously noted, as well as the reasons why. Weight (yours) can make a significant difference between what will work as well.
