I think you enter the main-wave a little bit too high, causing the bow to catch the falling water and loose the angle. But it's easier said then done .
Another thing to try is rotate a bit more into that stern-draw. Now it's a lot of leaning back, and extending your arm backwards, with a little rotation. If you'd manage to rotate the upper body a bit more towards the paddle side, your arm is less extended, hence less vulnerable and you're stronger. Controlling your tilt in that rotated position gets harder though... .
But it's an impressive progression so far! Good work. You're playing the trim of your L'Edge very well, you can see now the bow is not diving in and as a result you have way more control over the boats angle.

Today was a little better. I had the blade closer to my hip, and had good control. Managed a 10 - 15 second surf with lots of micro-corrections (draws & prys) before losing too much angle and jetting off. Gotta incorporate on the torso rotation (so much to think about!).

One of the best ways I know of, to get those micro corrections going, is to hit a wave, or even just some current, with someone holding your canoe on a line from a low bridge or so.
You have to have the right venue, but it's a brilliant way to practice those tiny corrections, rotation, ... .
