IMHO: The Probe 12 responds well to pulling in, ie. shortening the thwarts. Try 1.5 or 2". You might want to do this after you have paddled it for awhile.
I also agree that you ought to buy both; you can have too few, but never too many boats.

Re: footpeg comfort. Suggested by Craig Smerda a few months ago: taper the footpeg rails so they (and consequently the foot pegs) are closer together near the stern. This worked remarkably well for me and the work wasn't all that difficult even without removing the saddle to cut foam.

Sometimes it isn't the screws themselves that cause the problem, but rather the wooden gunwales pushing on the stems of the boat. Find the Wisconsin Sierra club river touring section website. I don't know the exact address but you'll find it right away with 'wisconsin sierra club RTS'. They have a link to USGS stream gauges, useful in case you want to do some exploring.

My GoPro suffered a case latch failure, which was replaced at no charge. The replacement case had an improved design for the latch (it was the catch that the latch grasps when case is locked). Seems to me the company has a pretty good customer service policy. Just my opinion.

If I were you I would remove the gunwales completely for this first winter. Oil them well including down into the screw holes (use a pipe cleaner). Then next spring when you reassemble the boat you will get some idea of what you are up against. I did this to our Dagger Legend when we first bought it...
